Business Overview:
Classic American bistro in historic setting offering fine food with seasonal, sustainable ingredients paired nightly with recommendations from an eclectic yet classic wine collection from the world's finest wine regions.
Two individuals that worked together in NYC decided to move South. One, a classically trained chef/sommelier at the Institute of Culinary Education (ICE) and a former Assistant Cellar Master. The other, a professional Sommelier who had the good fortune of working for two restauranteurs, one of whom had inherited a varietal wine collection (including many French wines). The two bought an existing restaurant and undertook major renovations and conversions of kitchen equipment, as well as the menu, to create a totally new ‘fine’ dining eatery with a bit of a casual atmosphere.
The restaurant soon earned a new reputation that spread well-beyond the limits of North Carolina, attracting a following of ‘foodies’ from several states along the East Coast and into the Midwest. The restaruant has received several accolades, capturing attention from several food and beverage magazines. It has been rated The Top Restaurant in the Triangle (Greater Raleigh area) by Open Table. Recently, it was acknowledged as one of only two ‘Best of Award of Excellence’ restaurants in the eastern half of the state by Wine Spectator.
Increased wine sales and catering using mobile food kitchen owned by company.
